This recipe in our family is called Henderson Soup. This recipe is from a lady I knew as a child, and you guessed it, her last name was Henderson.
This recipe is very quick and easy. While most soups simmer away for hours this one can be on your table in about 40 minutes.
Ingredients
1 Spanish onion
6 medium carrots diced in small cubes
3 medium potatoes diced into small cubes
1 & 1/2 cup boiling water
2 chicken bullion cubes (or 2 tsp powdered chicken bouillon)
1 tsp Worcestershire Sauce
1/4 tsp black pepper
1/2 tsp paprika
1/2 tsp ground thyme
1/4 tsp dry parsley
1/4 cup butter
3 Tbsp flour
3 Cups milk
salt to taste
Directions
In a large pot boil the vegetables with the water and bouillon.
Cook until the vegetables are very soft.
Mash the mixture with a potato masher.
In a smaller pot melt the butter and whisk in the flour. Add the milk all at once. Bring to a boil, then pour into the vegetable mixture.
Add the spices.
Allow mixture to simmer for 5-10 minutes.
Enjoy!
