
Nothing tastes better than tomatoes from your own garden. This recipe is a great way to preserve tomatoes for winter. With all the herbs added it makes meal preparation quick, just add the some beef or chicken.
Ingredients
10 Cups diced peeled tomatoes
1/4 Cup finely chopped fresh basil
1/4 Cup finely chopped parsley
2 Tbsp dried oregano
1 Tbsp minced garlic
1 Tbsp pickling or kosher salt


Directions
1. Place firm ripe tomatoes into boiled water and allow to sit 5-10 minutes. Remove and place into a bowl of ice water.
2. Slip skins from the tomatoes and remove the hard core portion near the stem.
3. Dice into 1/4- 1/3 inch chunks.
4. Add remaining ingredients and stir well.
5. Divide mixture into sterilized sealers. Pack the mixture down, leaving 1/2 inch space near the jar rim. Cover with a new washed sealer lid.
6. Place jars into a boiling canner. Boil for 30 minutes. Remove jars and allow to cool.
7. Once cool ensure the jars are sealed. Label, date and store in a cool dark location.
