
This fruit pie is a delicious dessert made with Ground cherries
We have never seen ground cherries sold in grocery stores. We grew them in our garden as a novelty one year. We enjoyed them so much so that we continue to grow them each year.
Ground cherries can be eaten fresh or preserved for the off season. We used our Jean’s Pie Pastry for this recipe
Ingredients
4 cups thawed or fresh ground cherries
2 Tbsp sugar
2 Tbsp corn starch
1/2 tsp vanilla extract
1 Tbsp butter
2 pieces of pastry
Directions
1. In a saucepan add the ground cherries, cornstarch, sugar and vanilla.
2. Cook over medium heat stirring often. Cook until the sugar is melted and the cornstarch has thickened.
3. Remove from heat and stir in the butter.
Note: When stirring be sure to keep ingredients from burning on the bottom, but gentle enough to not break all the cherries.

4. Roll out pastry to fit a 9 inch pie tin. Add the ground cherry mixture.
5. Roll out a second piece of pastry for the pie cover. Fold into fourths. Cut in vent holes.
6. Place over ground cherry mixture. Seal edges and remove excess dough.
7. Bake in a 350 degree oven for 50-60 minutes. Pie should be golden brown and bubbling.
