Raspberry Rice Pudding

This cool refreshing dessert is great for any occasion and is simple to make!

The recipe also includes cream cheese!  Every dish is better with cream cheese!

Raspberry Rice Pudding

Ingredients
1 8 ounce (250g ) package of Cream Cheese
1  14 ounce (400g ) bag frozen raspberries thawed NOT drained
17 ounces (500g) Cool Whip
4C Cooked pure Basmati rice
1  3 ounce size instant vanilla pudding

Raspberry Rice Pudding

Directions
1. With an electric beater, beat the room temperature cream cheese until smooth.  
2. Add the raspberries along with the juice, cool whip and pudding mix to the cream cheese mixture. 3. Continue to beat until smooth.  Stir in the rice.
4. Refrigerate for 2-3 hours prior serving.

This dessert can be made a day ahead of serving.
