
What to do with the turkey meat still on the bones? Make an easy to prepare soup of course!
You may substitute turkey for chicken. Makes 8 servings

Bone Broth
Ingredients
1 turkey carcass broke into pieces
3 carrots cut into 3 inch long portions
3 celery stalks cut into 3 inch portions
1 medium onion cut into 4 wedges
salt and pepper to taste

Directions
Place all the ingredients into a large Dutch oven or soup pot.
Cover all ingredients with water.
Bring pot to a boil then reduce to a slow simmer.
Continue to cook until the carcass falls apart.
Strain out the broth and place the strained portions onto a cookie sheet to cool. Once cool pull out the pieces of meat and set aside. Throw out the bones and cooked vegetables.
Soup
Ingredients
9 Cups bone broth
3 large carrots sliced
3 Celery Stalks diced
1 large onion diced
2 bay leaves
1 and 1/2 Tbsp dry parsley
2.5 Cups diced turkey
1 recipe egg noodles
salt and pepper to taste
Directions
Place all ingredients into a large soup pot. Simmer until the vegetables are fork tender.
