
Murlo made a series of high fibre muffin as part of our compliment of recipes. We found a great flavourful high fibre, low calorie Banana-Nut Oatmeal Muffin recipe at Eating Well
Ingredients
3 cups rolled oats
1 ½ cups low-fat milk
2 ripe bananas, mashed (about 3/4 cup)
⅓ cup packed brown sugar
2 large eggs, lightly beaten
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract
½ tsp salt
½ cup toasted chopped pecans
2 tsp lemon zest (not in original recipe)
Directions
1. Preheat oven to 375 degrees F.
2. Coat a muffin tin with cooking spray.
3. Combine oats, milk, bananas, brown sugar, eggs, baking powder, cinnamon, vanilla and salt in a large bowl. Fold in pecans.
4. Divide the mixture among the muffin cups (about 1/3 cup each).
5. Bake until a toothpick inserted in the center comes out clean, about 25 minutes.
6. Cool in the pan for 10 minutes, then turn out onto a wire rack.
