
A classic muffin recipe we never get tired of especially when enjoyed in the morning. Yields 30 muffins
Ingredients
1 c canola oil
3 eggs
1 c brown sugar
1 c white sugar
3 tsp baking soda
2 tsp salt
1 c blueberries or saskatoons (fresh or frozen)
3 c buttermilk
3 c bran
3 c flour
1 tsp vanilla

Directions
1. Mix buttermilk and bran together. Let stand about 20 minutes.
2. Mix together the oil, sugars, vanilla and eggs. Mix for 3-5 minutes with a mixmaster.

3. In a bowl mix the flour, baking sofa and salt.
4. Add the oil and egg mixture to the bran mixture. Stir to combine well.
5. Add flour mixture in batches, stirring to combine well.
6. Fold in berries. Divide into greased or paper lined muffin tins.
7. Bake in preheated 350 degree Fahrenheit oven for 25-30 minutes.
Muffins are done when a toothpick comes out clean.
