Easy Pancakes

Pancakes

Our great nephew loves his pancakes.  

When he comes to stay it’s very likely you will be awoken by a knock asking if there’s pancakes.  

These pancakes are always fluffy, never heavy as we use more milk than what most recipes require.  These are a hit with young and old.

Ingredients
1 cup flour
2 Tbsp white sugar
2 tsp baking powder
1 beaten egg
1 and 1/2 cup milk
1/4 tsp salt
1 Tbsp canola oil

Pancakes poured into pan

Directions
1. Mix together all dry ingredients.  Mix together the egg, milk and oil.
2. Combine the dry and wet mixtures, stirring until blended (mix can still appear a bit lumpy)
3. Heat a heavy non stick frying pan, greased with a small amount of oil.
4. Pour about 1/4 cup of batter per pancake.
5. Flip pancakes when the top is full of bubbles and the edges are dry looking.
6. Place into a warm oven until all pancakes are cooked.
7. Recipe yields eight, four inch pancakes.
