
What could be more cooling on a hot day than the cool refreshing taste of mint. This syrup is easy to make, stores in the fridge for a couple weeks. Try it in your lemonade or a mojito.
Ingredients
3 cups mint leaves
1 cup water
1 cup sugar
Directions
1. Rinse the fresh mint leaves and measure out 3 well packed cups of leaves and add to a sauce pan.
2. To the sauce pan add the water and sugar. Over medium heat bring the ingredients to a boil.
3. Reduce heat and allow mixture to simmer until the leaves are very limp and the liquid takes on a green tinge.
4. Line a strainer with cheesecloth or coffee filter and pour the sauce pan contents into a bowl.
5. Squeeze out the liquid. Place into a jar and store in the fridge.
6. This syrup will keep for a couple weeks, although ours never lasts that long.
