
A great dish using your garden fresh peppers.
Ingredients
4 medium size Green Peppers
2 Tbsp canola oil
3/4 lb ground beef
1 C diced onion
1/8th cup chopped fresh basil
1/8 cup chopped fresh parsley
1/2 C uncooked rice
1 peeled and diced medium tomato
1 1/4 C tomato juice
1/2 C grated cheddar cheese
Parmesan cheese


Directions
Wash peppers. Slice off the end near the stem and remove seeds and pith (white membrane).
In a medium hot frying pan add the oil. Once hot add the ground beef and onion. Stir often until the beef is browned and loose pieces.
Add the herbs, rice, 1 Cup tomato juice and tomato. Once mixture is boiling lower heat, cover and allow to simmer until thick and the rice is cooked.
Add in the 1/2 Cup grated cheddar and mix well.
Remove from heat. Spoon mixture into the cavity of the green peppers.
In a deep dish that allows peppers to rest against each other, pour the 1/4 Cup tomato juice in. Place peppers into the pan. Sprinkle with Parmesan cheese.


Bake 45-60 minutes in a 350 degree Fahrenheit preheated oven.
Peppers are done when the wall of the pepper is fork tender.
Note: if the peppers are not flat enough on the bottom, make a donut shape with some aluminum foil to prop up the pepper.
