
Mint seems to be a rarely used herb. Mint in this salad gives it a nice refreshing flavour for those hot summer days when we can gather fresh veg from the garden.
Ingredients
5 cups fresh green beans
1.5 cups fresh shelled peas
1/4 cup slivered almonds
2 cups rough chopped mint leaves
2 Tbsp rice wine vinegar
2 Tbsp dijon or whole grain mustard
2 Tbsp canola oil
3 Tbsp real bacon bits
Directions
1. Boil a pot of salted water. Add the green beans and boil for 3 minutes. Drain and immediately plunge beans into a cold water bath. Drain and add to a large bowl.
2. Boil a pot of salted water. Add the fresh peas and boil for 2 minutes. Drain and plunge into ice water. Drain and add to the bowl of beans.
3. Roughly chop the mint leaves and add to the bowl of vegetables. Add the almonds and bacon bits.

4. Whisk the vinegar and mustard, while whisking slowly add oil.
Add to the vegetables and toss to coat .
Refrigerate until serving.
