
Casseroles are comfort foods. The addition of blue cheese gives the dish a bit of sophistication and great flavour.
Ingredients
2 skinless, boneless chicken breasts
(cut in1 inch cubes)
2 Cups sliced mushrooms
1 small onion finely diced
1 shallot finely diced
1 stalk of celery finely diced
3 Tbsp butter
1/4 Cup all purpose flour
1 1/4 Cup milk

1/3 Cup Parmesan cheese grated
1/4 Cup blue cheese crumbled
1/2 Cup mozzarella cheese grated
2 Cups fusilli pasta
2 Tbsp Parsley

Directions
1. Over medium high heat sear chicken in a large non stick frying pan
2. Add onion, shallot, celery, mushrooms and parsley. Fry until onions are translucent.
3. Remove from the pan and hold warm.
4. Bring pasta water with a pinch of salt to a boil. Boil pasta to al dente stage.
5. In frying pan used for the chicken melt butter, add flour to make a roux.
6. Add Parmesan and blue cheese, slowly add the milk whisking the mixture to create a smooth sauce.
7. Drain pasta and add to the pan along with the chicken mixture. Stir mixture until evenly mixed and the pasta is coated with the sauce.

Transfer mixture to a casserole dish sprinkle with mozzarella cheese . Place into a preheated 350 degree Fahrenheit oven, bake 20-30 minutes. Dish will be bubbling along the edge and the cheese will be golden.
Serve with your favourite bread and salad.
