
As kids we loved cracker jacks. My mom had found a recipe for Carmel Corn which she modified to taste much like the Cracker Jack taste we loved.

Ingredients
24 Cups popped popcorn
1 1/2 cup peanuts (optional)
1 cup butter
2 cups packed brown sugar
1/2 cup corn syrup
1 Tbsp molasses

Directions
Mix together dry ingredients in a large pan. We use a turkey roaster. In a large pot add the butter and sugars. Over medium heat bring the mixture to a boil. Ensure to stir constantly while boiling, scraping the bottom of the pot. Mixture needs to boil hard until it hits the hard candy stage. This will take 5-6 minutes.

Pour mixture over popcorn and mix well. Place roaster into a preheated 250 degree Fahrenheit oven. Stir mix every 15 minutes. Continue to roast and stir until the mixture is easily stirred and the popcorn pieces are individual pieces versus clumps of popcorn. This can take 1 hour to 1.5 hours. Allow to cool then place in containers and enjoy.

*Tip
To determine if the sugar mixture is at the hard boil stage, drizzle some into a cup of cold water. If it sets like a hard candy it’s ready, if it’s more like toffee, continue to boil.
