Maple Walnut Roasted Butternut Squash

Tastes like candy and it’s good for for you.  Yum!

Ingredients
1 medium sized butternut squash
4 Tbsp Maple Syrup
4 Tbsp chopped walnuts
2 Tbsp canola oil

Directions
1. Peel squash, slice in half and remove the seeds and stringy bits.
2. Cut squash into 1 and 1/2 inch cubes.  Place in a shallow roasting pan.  
3. Pour oil, syrup and nuts over top and stir to coat evenly.
4. Place into a preheated 350 degree Fahrenheit oven.  Roast for approximately 1 hour or until the squash is fork tender.  
5. Serve with our Rosemary Infused Pork Chops, it’s a great combination.
