
A quick side dish and a great alternative to peas and carrots. Serves 8!
Ingredients
8 Cups parsnips cut in 1” cubes
1 tsp ground sage
1 tsp ground thyme
1/2 Tbsp minced garlic
1/2 tsp salt
3 Tbsp butter
1/3 Cup milk or half and half
Directions
1. In a large pot put the cubes parsnips, salt and a couple inches of water. Bring to a boil then turn down heat to low-medium. Cook until fork tender.
2. Remove from heat and mash with a potato masher. Add sage, thyme garlic , butter and milk. 3. Continue to mash until you achieve the desired consistency.
4. Salt and pepper to taste.
5. Place in bowl and decorate with parsley or chives.
