
A great dish to use up leftover mashed potatoes.
You may start cooking extra potatoes just to have these the next day. Freezing potato patties is fine.
Ingredients
3 Tbsp cooked bacon bits
1/4 cup finely chopped green onions
1 Cup cheddar or mozzarella cheese
3 cups mashed potatoes
1 large egg
1 tsp basil
1 tsp parsley
1/2 cup flour (approximately)
1/4 tsp salt
Directions
1. In a large bowl add all but the egg and flour. Use your hand to thoroughly mix the ingredients. Add the beaten egg, continue to mix the ingredients. The mixture needs to be sticky enough to hold together but not so sticky it sticks to your hands. Use the flour to get a consistency that holds together but allows you to drop them onto a tray.
2. Use 1/3 cup of mixture and form into a patty about 3/4 to 1 inch deep. Dust both sides with flour.
3. Melt 2 Tbsp butter in a hot frying pan. A hot pan is more likely to release the patty, where as at a low heat the Pattie’s may stick and fall apart.
4. Brown well on both sides. Serve with a dollop of sour cream.
Note: Freeze leftover patties. Simply pre-heat the oven to 375 degrees Fahrenheit and place frozen patties until heated thoroughly.
