
Sliced pickled red onion is a twist on a root vegetable.
Use this simple inexpensive recipe as another way to garnish a dish or use as a condiment.
Ingredients
1 large red onion
1 tsp peppercorn
1 tsp salt
1/4 C apple cider vinegar
1/4 C water
1/4 C sugar
Directions
1. Thinly slice red onion
2. In a saucepan add the peppercorns, vinegar, water, salt and sugar then bring to a boil.
3. Pack the thinly sliced onion into a quart sealer.
4. Pour the hot brine over the onions. Place jar in the fridge.
These are best made the day before serving. The pickled onions will keep for several weeks in the fridge.
