Linguine Mussel Pasta

A quick and simple dish. The white wine sauce gives this seafood dish an elegant flavour.

Ingredients
1 clove minced garlic
1 medium diced onion
1 and 1/2 cups mussels
5 Tbsp butter
1/2 cup dry white wine*
1/2 cup chicken stock
2 Tbsp lemon juice
1/2 package dry linguine (900 gram sized package)

Directions

In a frying pan add the butter, once melted add in the garlic and onion. Cook until the onions are translucent.

Add in the mussels and liquids. Simmer for a couple of minutes. Season with salt and pepper to taste.
Toss in cooked pasta and serve. Top with fresh parsley or cilantro.

*For those that do not have wine on hand, a mixture of half water & half apple cider vinegar can be used.
