Comfort food at its best!
This tasty recipe is another way to enjoy traditional perogies with a different twist in the form of a casserole.
The pasta used in this recipe is from our own Homemade Pasta Dough.
Ingredients
8 medium russet potatoes
4 Tbsp butter
1 medium onion
1/2 cup cream
2 Tbsp butter
1 cup cheddar cheese

Directions
1. Mix a double batch of our Homemade Pasta Dough. Set aside to rest.
2. Peel and chop potatoes into small cubes. Place into a large pot cover 1/2 way with water and add a pinch of salt. Boil until fork tender.
3. While the potatoes are boiling dice the onion and fry until translucent in the 4 Tbsp of butter.
4. Once potatoes are soft, drain and mash. Add 2 Tbsp butter, cream and cheese and mix well. Set aside.
5. Roll out 1/4 of the pasta dough at a time using a rolling pin or pasta machine.
6. In a greased 10.5 X 8.5 X 3 inch covered casserole dish place the first sheets of rolled pasta dough. Cover the bottom and sides, overlapping the sheet’s slightly.

7. Add 1/2 of the potato mixture. Cover this layer with sheets of pasta dough, this time only cover the potato mixture (do not go up the sides of the dish.)
8. Add the remaining potato mixture and cover with sheets of pasta dough. Trim the dough from the sides of the casserole dish even to the overall height of the ingredients.
9. Top with butter and onion mix.
10. Bake covered in a 350 degree oven for 45-60 minutes. Serve with sour cream and chives.
Note: If you prefer you may use store purchased fresh pasta or cooked lasagna noodles.
