
The fact this can be made a couple days before makes it a great entertaining dessert.
Ingredients
2 1/2 cups graham wafer crumbs
1/2 cup melted butter
2 eggs
1 1/2 cup icing sugar
1 cup cream whipped
1 can crushed pineapple ( 398ml)
Directions
1. 1st layer: Mix graham wafer crumbs
with the melted butter and press into a pan.
2. 2nd layer: Beat the eggs and icing sugar until creamy and thickened. Spread over the crumb mixture.

3. 3rd layer: Beat cream until you have a stiff whipped cream, fold in 1 can crushed pineapple (drained). Spread over the egg and sugar mixture. Sprinkle with a few graham crumbs over the top and refrigerate.
