We love soft tortillas . This recipe is easy to follow and makes a great sturdy yet very soft tortillas.

1 Cup all purpose flour
1 Cup Masa Flour
2 Tbsp lard or shortening
1/2 tsp salt
3/4 Cup water.

Mix together the flours and salt. Add the lard and mix in until it resembles small crumbs. Add in the water. Stir until the mixture comes together. Turn out on the lightly floured surface and knead until smooth. If the mixture seems dry add additional water, if it is sticky add additional flour.

Divide into 12 portions. Cover and allow to rest for thirty minutes.

One at a time roll out the tortillas. We do not have a press, but this dough is easy enough to roll into a 9 inch circle with a heavy rolling pin.

Cooking Tortilla in a Dry Frying Pan

Heat a dry pan over medium high heat. A heavy frying pan such as a cast iron pan works well as they maintain an even heat.

Carefully lay a tortilla into the dry pan. These cook quickly. You will notice air bubbles form, turn with kitchen tongs to cook the other side.

Soft tortillas

Lay the cooked tortilla onto a plate and cover with a pot lid to keep warm and soft.

Leftover tortillas freeze well. To reheat wrap in a damp kitchen towel and place in a 300 degree oven for several minutes.

Cilantro Tortilla Sauce

Cilantro Tortilla Sauce

1/2 Cup mayonnaise
1 tsp crushed garlic
1 Tbsp lemon juice
3 Tbsp finely chopped fresh cilantro
1 Tbsp olive oil
a Pinch of salt and pepper

Finely chop the cilantro leaves. Mix all ingredients together and refrigerate. We make this sauce a few hours before using to give the flavours time to come together.

Filling a Tortilla

Fill with ingredients of your choice. We’ve used pork, chicken or beef along with tomatoes, onions, peppers, avocado and lettuce.
