
Radishes can be so much more than just a salad item. This recipe is a great way to use your radish harvest.
Ingredients
1 pound red radish
1 small red onion
1 Tbsp mustard seed
3/4 Cup white sugar
1 Cup white vinegar
1 tsp dried chilli pepper flakes
2 Tbsp cornstarch
2 Tbsp white vinegar

Directions
Use a food processor to finely mince the radish and onion. Using a pulse or grater option is best. You want small even minced pieces but not mush.
Add all ingredients to a large pot and bring to a boil. Mix cornstarch with the second portion of vingear and stir into the boiling mixture to thicken.
Fill small sterilized jars leaving 1/2 inch space. Cover with a clean new sealer lid. Process jars in a canner for 15-20 minutes.
Allow jars to cool. Ensure all jars are sealed. Unsealed jars should be stored in the refrigerator. Label and date prior storing.
