A simple and quick vegetable side that goes well with any main dish. This dish takes about 10 minutes from pan to dish. Serves 6.
1 small zucchini sliced in half then cut in 1/4 inch slices
1 small onion
1/2 of a red, yellow and orange pepper cut in 1/4 inch wedges
1 and 1/2 cup broccoli flowerettes
1 and 1/2 tsp dried thyme leaves
2 Tbsp canola oil
salt and pepper to taste
1. In a large non stick frying pan over medium high heat add the oil then the onions and zucchini, cook until almost transparent.
2. Add the remaining chopped vegetables.
3. Sprinkle with salt and pepper to taste along with the thyme leaves.
4. Stir until the veggies are bright in colour but not soft.
