Roasted Cherry Tomatoes

A delicious and very versatile dish.
Serves 6

3 cups of cherry tomatoes cut in half
1/2 Tbsp minced garlic
1 Tbsp diced fresh oregano
1 Tbsp diced fresh basil
salt and pepper to taste
Canola  oil

1. Mix tomatoes and spices drizzle enough oil to evenly coat all the tomatoes.
2. Place mixture into a pan large enough that the tomatoes are a single layer.
3. Place into a pre-heated 250 degree Fahrenheit oven.
4. Stir every 30  minutes.
5. Roasting is complete once there no liquid left in the pan, remove from oven.
6. Let cool.

Note: We freeze the roasted tomatoes in 1/2 cup portions.  A great addition to soups or pasta sauces.  Also very good on goat cheese as an appetizer.
