
A great tasting dish of simple ingredients.
Pineapple is a great addition to any recipe including this chicken dish. This is especially true if you enjoy a North America Chinese dish.
Ingredients
2 skinless deboned chicken breasts cut in 1 inch cubes
1 can crushed pineapple (398ml or 13.5 oz)
3 Tbsp ketchup
1 Tbsp cornstarch
2 Tbsp water
1 Tbsp apple cider vinegar
1/2 Cup diced green peppers
salt and pepper
Directions
In a large frying pan sear the chicken pieces until golden brown. Add the green pepper and cook until the peppers take on a bright colour. Transfer to a casserole dish.
In a sauce pan combine the pineapple along with the juice. Add the ketchup and salt and pepper to taste. Bring mixture to a boil.
In a cup mix the cornstarch into the water and vinegar, mix well. Pour into the sauce pan of pineapple and continue to stir until the mixture is thickened. Empty sauce pan into the casserole dish and mix well with the chicken.

Place casserole dish in a 350 degree preheated oven and cook for 20-30 minutes.
Serve on a bed of your favourite rice. Our zucchini and pepper vegetable side goes well with this dish.
