Lemon Chicken and Broccoli Pasta

This healthy dish has a nice light flavour.  A quick meal your family will ask you to make again.

Ingredients
2 chicken breasts cut in 1 and 1/2 inch cubes
1 medium onion cut in 1/4 inch wedges
1 and 1/2 cups sliced cremini mushrooms
3 cups broccoli flowerets
2 garlic cloves minced
2 cups dry cavatappi or penne pasta
1 and 1/2 tsp lemon pepper (or more if you like)
2 Tbsp lemon juice
1/2 cup chicken stock
2-3 Tbsp cooking oil

1. In a large non stick frying pan add the cooking oil. Allow pan to heat then put in the chicken and the onions.

2. While the chicken is browning add the pasta to boiling lightly salted water.  Cook to al dente.

3. To the chicken and onions, add the broccoli, garlic and mushrooms.  Stir mixture until the broccoli takes on a deep green colour and the mushrooms soften a bit.

4. Add the stock and simmer a couple of minutes.  Now add in the drained pasta.  Allow mixture to cook a couple more minutes.  The pasta will thicken the sauce.

5. Serve with some Parmesan cheese sprinkled on top.
