A delicious healthy muffin recipe that freezes well. This is our adaptation of a recipe from eatingwell.com where we use saskatoons.
Pictured below are Saskatoons berries found on the Canadian Prairies. They are similar to blueberries pack a stronger flavour and contain more fibre.
Ingredients
1. In a large bowl mix together all dry ingredients and berries.
2. In a small bowl mix together all wet ingredients
3. Combine wet and dry until all ingredients are moistened
4. Divide batter into 12 baking cup lined muffin tin.
5. Bake in a preheated 400 degree oven for 20 minutes or until a toothpick comes out clean.
