This awesome recipe is good for you and delicious?
Ingredients
1 cup plain Greek style yogurt
1/4 cup milk
1 tsp vanilla
1 egg
4 Tbsp melted butter
1/2 cup white sugar
1 cup old fashioned rolled oats
3/4 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
zest from medium size navel orange
1 cup roughly chopped mixed frozen berries
(we use a blend of strawberries, raspberries and dark cherries)
Directions
1. In a small bowl whisk together sugar, egg, vanilla, milk and yogurt.
2. In a large bowl mix flour, rolled oats, baking soap, baking powder and salt.
3. Roughly chop the mixed berries. Then toss into the flour mix continue to toss until they are well coated.
4. Add melted butter to the yogurt mixture.
5. Add wet mixture to the dry mixture. Stir until combined.
Over mixing will make your muffins tough.
6. Using a 1/4 cup measuring cup fill a 12 portioned greased or paper lined muffin tin.
7. Place tin into a 375 degree preheated oven. Bake 15-18 minutes. Muffins are done when a toothpick comes out clean.
